
Tofu and Bean Sprouts
This is an easy to prepare dish that only takes minutes to prepare. The key point to note is that you should not overcook the bean sprouts. You want them nice and crunchy.
Ingredients:
- 150 grams bean sprouts
- 1 red bell pepper sliced
- 1 slice garlic
- 1 small chopped onion
- 1 block of tofu cut into smaller cubes
- Ω tsp of turmeric
- Ω tsp of chilli powder
- Soya sauce
- 1 – 2 tablepoons of vegetable oil
Directions:
Heat oil in pan until hot. Add in onions and tofu and stir fry for 2 to 3 minutes. Add in garlic, turmeric and chilli powder and stir fry for 1 minute.
Add bell pepper into pan and stir fry for 1 minute. Add 1 to 2 tbsp of soya sauce to wok, followed by the bean sprouts.
Toss the mix around in the pan on high heat so that the bean sprouts get coated with all the flavor in the oil and sauce. Fry sprouts on high heat and remove from heat.
(Bean sprouts should be removed from pan while they still look white and crunchy. This will prevent overcooking which makes them limp.)
Place sprouts in bowl and allow to cool. Ready to serve.

Crunchy Celery Salad
Celery can have a strong smell and some people love it, while other hate it. If you love it, this recipe will make for a yummy dish – and celery is vitamin K, potassium, vitamin C, etc. So, it ís healthy too.
Ingredients:
- 4 celery stalks (finely chopped)
- 1 red apples (chopped into small cubes)
- 1 green apple (chopped into small Cubes)
- 2 red bell peppers (cored, seeded and chopped into slices)
- 1 yellow bell pepper (cored, seeded and chopped into slices)
- Raisins (if you like them)
- 100 grams walnuts
- Few sprigs of parsley
- Extra virgin olive oil
Directions:
Wash the celery, apples and peppers well before preparing.
Add all ingredients in a big salad bowl.
Sprinkle with Walnuts
Drizzle the salad with extra virgin olive oil. Toss the salad and it ís ready to serve.
